Gingami No. 3 is one of the high-grade stainless steels (Yasuki Hagane) manufactured by Hitachi Metals, commonly known as "Ginsan". It is highly regarded as a knife material that achieves the sharpness and ease of sharpening of carbon steel (hagane) while being resistant to rust like stainless steel. The harder the knife blade, the sharper it is said to be, and steel is generally harder than stainless steel, but it has the characteristic of rusting easily, which is why it has been said that "a blade that rusts cuts better." Ginsan is a special steel that combines the best of both worlds, pursuing rust resistance while being a steel.

Name engraving can be added from the option selection on this page.

Type: Santoku knife
Steel: Ginsan No. 3 (rust-resistant)
Blade length: 18cm
Blade grind: Double-edged (suitable for both right and left-handed users)
Handle wood: Hiba
Handle finish: Indigo dyeing + waterproof coating
Production area: Japan (Osaka / Tokushima / Fukui / Saitama)

The Santoku knife is widely used in general households.
It can be used for meat, fish, and vegetables, hence the name "Santoku" (three virtues), and is sometimes called an all-purpose knife because of its versatility.
The blade is wider than a petty knife or gyuto knife, which is designed to ensure the blade remains inside when cutting large vegetables like cabbage, allowing for a complete cut.
It is an ideal first knife or replacement.

What is Ai-Bocho?>

Indigo dyeing, known for its antibacterial and deodorizing properties, has supported our daily lives. By incorporating this technique, the "Ai-Bocho" was born, balancing functionality and aesthetics. This product combines the traditional Sakai cutlery of Osaka with the indigo dyeing rooted in Tokushima's history. This "artisan collaboration" by craftsmen from different regions and with different skills aims to enhance added value by combining the values of their respective techniques. Ai-Bocho is also a project that aims to benefit multiple regions with a single product and revitalize traditional Japanese techniques. Please enjoy the collaboration of artisan skills.
