Gingami No. 3 is one of the high-grade stainless steels (Yasuki Hagane) manufactured by Hitachi Metals, commonly known as "Ginsan." It is highly regarded as a material for knives that achieves the sharp edge and ease of sharpening of carbon steel (hagane), while also being rust-resistant stainless steel.It is said that the harder the knife blade, the sharper the cut, and steel is generally harder than stainless steel, but it also has a characteristic of being prone to rust, hence the saying, "The rustier the blade, the better it cuts." Ginsan is a special steel that combines the best of both worlds, developed to be rust-resistant while still being steel.

The Gyuto (chef's knife) was introduced to Japan from the West during the Meiji period along with the culture of eating meat.
Its blade is narrower than that of a Santoku knife, a typical household knife, and is designed to cut meat more easily.
Over time, it came to be used as a "large all-purpose knife" capable of handling larger ingredients, and came to be called a chef's knife.
Its slender, stylish appearance is also a reason for its popularity.


Ai-zome (indigo dyeing) has supported our lives with its antibacterial and deodorizing effects. Ai-Bocho is a product born from combining this technology with functionality and aesthetics. It is a product that combines Sakai cutlery, a tradition of Osaka, with indigo dyeing rooted in the history of Tokushima. This "artisan collaboration" by craftsmen from different regions and with different techniques aims to enhance added value by combining the values of their respective techniques. Ai-Bocho is also a project that aims to revitalize traditional Japanese techniques by bringing benefits to multiple regions with a single product. ・The indigo dye will not ooze out due to the waterproof coating that complies with the Food Sanitation Act.

・Please note that the waterproof coating may peel off if subjected to strong impact.

- Trying to cut hard or frozen items may cause the blade to spill.

・Do not heat the blade.

・Please do not use the dishwasher.

- After washing with a neutral detergent, remove the moisture thoroughly and let it air dry.
