What is a Santoku Knife?
The Santoku knife is widely used in general households.
Its name, "Santoku," meaning "three virtues," comes from its ability to handle meat, fish, and vegetables, and it is sometimes called an all-purpose knife because of its versatility.
The blade is wider than that of a petty knife or a chef's knife, which is designed to keep the blade in contact with larger vegetables like cabbage, allowing you to cut all the way through.
It is the ideal knife for a first purchase or as a replacement.

What is GINSAN?
GINSAN (Ginsan steel) is a steel material that offers rust resistance despite being a type of steel. The sharper a knife blade is, the harder it is considered to be, and steel is generally harder than stainless steel. Steel has a tendency to rust, so it has been said that "a blade that rusts cuts better." GINSAN is a special steel material that combines the best of both worlds, being steel yet developed to be rust-resistant.

What is Nashiji?
Nashiji refers to a rough, pear-skin-like surface. In traditional crafts, it is used as one of the processing techniques for textiles and maki-e lacquerware, and it is also widely used in textured finishes. (Although sandblasting has a similar feel and appearance, the fundamental difference is that a sandblasted finish has a concave surface, while a Nashiji finish has a convex surface.) It is a simple and matte finish that conveys the handmade feel of a craftsman and has a strong presence.

What is an Aizome Knife?
Aizome (indigo dyeing), known for its antibacterial and deodorizing effects, has supported our lives for centuries. The "Aizome Knife" was born by incorporating this technique, achieving both functionality and visual appeal. It is a product that combines Sakai cutlery, a tradition of Osaka, with indigo dyeing rooted in Tokushima's history. This "craftsman collaboration" by artisans from different regions and with different skills aims to enhance added value by combining the strengths of their respective techniques. The Aizome Knife project also aims to benefit multiple regions through a single product and revitalize traditional Japanese craftsmanship. ・The indigo dye will not ooze out due to the waterproof coating that complies with the Food Sanitation Act.

・Please note that the waterproof coating may peel off if subjected to strong impact.

- Trying to cut hard or frozen items may cause the blade to spill.

・Do not heat the blade.

・Please do not use the dishwasher.

- After washing with a neutral detergent, remove the moisture thoroughly and let it air dry.
