About Gyuto Knives
The Gyuto is a knife that developed in Japan after Western meat-eating culture was introduced during the Meiji period. Overseas, it is known as a Chef Knife.
Originally, its blade was narrower than that of a Santoku knife, designed specifically for cutting meat.
However, it is also widely used by those who frequently cut large ingredients, functioning as a larger Santoku knife.
With its slimmer and more stylish appearance than a Santoku, it is the most popular type overseas.
About the Senko Aitenmoku Series
The blades are crafted by Yu Kurosaki, a leading Japanese blacksmith. Featured in numerous programs and boasting fans worldwide, Kurosaki's distinguishing characteristics are the unique hammered pattern (tsuchime) he personally embeds into the blade and the overwhelming sharpness delivered by the high-grade steel, Super Gold HSS. The Senko series is a beautiful collection with a hammered pattern designed on the blade, inspired by 'light'. As a traditional craftsman, Kurosaki handcrafts each piece, making these precious blades limited in production. The handles were developed by Teruyuki Sakamoto of Edit Japan, a producer of traditional Japanese crafts, in collaboration with Mai Kobo, a group of artisans from Tokushima Prefecture renowned for their special technique of "indigo dyeing wood." Building on the "Aibōchō" (indigo knife) collaboration, which blended indigo dyeing with knife craftsmanship, this new series further evolves by incorporating the ceramic art technique of tenmoku and the lacquerware technique of kanshitsu into the indigo dye. It features an easy grip due to its uneven surface and a distinctive look from the indigo, which is believed to have antibacterial properties. Please behold this unique collaboration knife, a fusion of Kurosaki's "Senko" and the indigo-dyed "Tenmoku."
About the Sheath
Originally, Yu Kurosaki's knives do not come with a sheath, so Edit Japan developed an original sheath for this series. All sheaths are unified in a kiritsuke-gata style, characterized by an angled tip. Furthermore, the cross-section is designed with a mountain-like two-sided shape to highlight the bright and shaded parts of the tenmoku pattern. Detailed considerations have also been made, such as a string to tie the pin to the sheath, preventing the pin from being lost.

Yu Kurosaki's signature is already engraved on the blade of this product.

Handling / Precautions
- Do not cut or strike bones or frozen foods. This may cause chipping of the blade.
- Hand wash with water, thoroughly dry with a cloth, and air dry.
- Please refrain from using a dishwasher.
- The food-grade waterproof coating prevents indigo from leaching out,
but please be careful of chipping or cracking caused by strong impacts, such as striking the handle.
- Due to being handmade, there may be individual differences in the color and appearance of the indigo dye.
- As this product is produced in very limited quantities, please allow 1 to 2 months for delivery.
- The blade shape has slightly changed, now featuring a sharp tip on the rounded part, becoming the "Ei series."
