What is a Gyuto knife?
A knife that developed in Japan after being introduced from the West with Western meat-eating culture during the Meiji period, known as a Chef Knife overseas.
Originally, it had a narrower blade than a Santoku knife and was specifically for cutting meat,
but it is now also widely used as a larger Santoku knife by those who often cut large ingredients.
With a slimmer and more stylish appearance than a Santoku,
it is the second most popular type after the 21cm Gyuto overseas.
About the Senko Rantenmoku Series
The blade is crafted by Yu Kurosaki, a leading Japanese blacksmith. Featured in numerous programs and with fans worldwide, his key characteristics include the unique hammered pattern (tsuchime) he personally strikes into the blade, and the overwhelming sharpness provided by the high-grade Super Gold High-Speed Steel. The Senko series is a beautiful collection with a hammered pattern inspired by "light" designed on the blade. As a master traditional craftsman, he handcrafts each piece, resulting in a limited and precious production. The handle was developed by Teruyuki Sakamoto of EDIT JAPAN, a Japanese traditional craft producer, in collaboration with Mai Kobo, a group of artisans in Tokushima Prefecture who possess a special "wood indigo dyeing" technique. Building on their previous "Ai Hocho" knife, which pioneered the combination of indigo dyeing and knives, this collaboration has evolved further. This time, the handles incorporate Tenmoku, a pottery technique, and Kanshitsu, a lacquerware technique, into the indigo dyeing. This results in a unique appearance with an easy-to-grip textured surface and the distinctive look of indigo, which is believed to have antibacterial properties. Please take a look at this one-of-a-kind collaboration knife, combining Mr. Kurosaki's "Senko" (flash/light) and the indigo-dyed "Tenmoku."
About the Sheath
Originally, Mr. Yu Kurosaki's knives did not come with a sheath, so EDIT JAPAN developed an original sheath for this series. All sheaths are in a "kiritsuke-gata" style, meaning the tip of the blade has an angled shape. Additionally, the cross-section is designed with a two-faceted, mountain-like shape to highlight the bright and shaded areas of the Tenmoku finish. Furthermore, small details such as a cord to attach the pin to the sheath have been incorporated to prevent the pin from being lost.
About Engraving
The blade of this product bears Mr. Yu Kurosaki's signature (mei).
Please note that custom engraving is not available.
Handling / Precautions
- Do not cut or chop bones or frozen foods. This may cause chipping of the blade.
- Hand wash with water, thoroughly wipe off moisture with a dry cloth, and air dry.
- Please refrain from using a dishwasher.
- Although the indigo will not seep out due to the food-grade waterproof coating,
please be careful of chipping or cracking if the handle receives strong impact, such as being struck.
- As these are handcrafted, there may be individual differences in the color and appearance of the indigo dye.
- Due to the very limited production quantity of this product, please allow 1 to 2 months for delivery.
- The rounded tip of the blade will be changed to a sharper shape.
