<About the Ai knife>
This knife was created through the collaboration of artisans using blades from Sakai, Osaka, and indigo dyeing from Tokushima.
The base wood of the handle is Hiba, which is hard to rot, and is dyed with indigo, which is said to have antibacterial and deodorizing effects.
Furthermore, by applying a waterproof coating that complies with the Food Sanitation Act, the indigo dye will not fall off.
