Literally, it is used to cut the sinews of meat, and along with the beef knife, bone-cutting knife, skin-stripping knife, etc., it is a knife that was introduced and developed from the West along with the carnivorous culture.

Carefully cutting off the sinew from beef steaks and roasts will preserve the texture.
You can keep only the delicious parts.
A sujihiki knife is essential for cutting just the sinews of meat.

Recently, more and more people are using a sujihiki knife to pull sashimi.
The Western knife, the Sujihiki knife, and the Japanese knife, the Yanagiba knife, have completely different histories, but they are surprisingly similar in shape.

When cutting sashimi, a knife with a long blade is used to cut the sashimi all at once to create a beautiful cut, so a sujihiki knife can be used in the same way.

Made of stainless steel, this easy-to-use Yanagiba knife will not rust and will be useful at home.

"Craftsman collaboration" combines different craftsmanship techniques from different production areas.
This is a collaboration product between Osaka's Sakai cutlery, which boasts a history of 600 years, and Tokushima's indigo dyeing.

The base wood is Hiba wood, which is top class in rot resistance.
We applied indigo dyeing, which has been valued since ancient times for its antibacterial, deodorizing, and insect repellent effects.

After dyeing the wood, we spray it with indigo dye to create a gradation.
A product that combines functionality and visuals has been created.

Please note that the indigo dye is coated with a waterproof coating that complies with the Food Sanitation Act.
Rest assured that the indigo dye will not bleed or fall off.

Another concept is ``generating profits in multiple production areas with one product.''
Indigo knife is also a new initiative to revitalize and revitalize Japan.

- Trying to cut hard or frozen items may cause the blade to spill.

・Do not heat the blade.

・Please do not use the dishwasher.

- After washing with a neutral detergent, remove the moisture thoroughly and let it air dry.

Thoughts on Ai knives

There is a reason why I decided to create a knife with a new concept called the Ai knife.

I wanted to make Japanese knives more hygienic, and I wanted to stimulate the manufacturing industry and craftsmen by creating new value.

In order to create value that is unaffected by time and culture, we decided to develop products centered on functionality and people.

When it comes to tools, functionality is more important than design. It involves people, not machines. I thought that something that is spontaneous and unique to humans, and in a sense resembles folk art, would resonate with the hearts of those of us who are tired of mass production and mass consumption. Possibilities created by craftsmen who would otherwise never have met.
