<What is Ginsan?>
Gingami No. 3 (Silver Paper No. 3) is one of the high-grade stainless steel materials (Yasugi Hagane) manufactured by Hitachi Metals, commonly known as "Ginsan." It is highly regarded as a knife material that achieves the sharpness and ease of sharpening of carbon steel (hagane) while being resistant to rust like stainless steel. Knife blades are said to be sharper the harder they are, and steel is generally a harder material than stainless steel, but it also has the characteristic of rusting easily, which is why it has been said that "a rusty blade cuts better." Ginsan is a special steel material that combines the best of both worlds, being steel yet developed to be rust-resistant.

<What is a Petty Knife?>
A small knife named "Petty" meaning small.
Originally used for cutting fruits and peeling vegetables, it can now be used as a small all-purpose knife.
It can handle not only fruits but also meat, fish, and vegetables.
It is easy to handle, lightweight, and convenient, making it a popular choice for outdoor use when portability is important, or as a child's "first knife." It's also perfect for those who find a Santoku knife a bit too large.

<What is an Ai-Bocho (Indigo Knife)?>

Indigo dyeing, which has supported our lives with its antibacterial and deodorizing effects, is incorporated into "Ai-Bocho" to achieve both functionality and visual appeal. This product is a collaboration between Sakai cutlery, a tradition of Osaka, and indigo dyeing, deeply rooted in Tokushima's history. This "artisan collaboration" between craftsmen from different regions and with different techniques aims to enhance added value by combining the strengths of their respective skills. The Ai-Bocho project also seeks to revitalize traditional Japanese techniques by bringing benefits to multiple production areas through a single product. Please enjoy the exquisite collaboration of craftsmanship.
