<What is a Santoku knife>
Santoku knives are widely used in households.
This knife comes from the fact that it has the three virtues of being able to handle meat, fish, and vegetables, and because it can be used in any way, it is sometimes called an all-purpose knife.
The reason why the blade is wider than the Petty or Gyuto knife is to ensure that even when cutting large vegetables such as cabbage, the blade remains firmly inside and cuts through to the end.

<What is Ginzo>
Gin-san is a steel material that has been made resistant to rust. It is said that the harder a knife blade is, the sharper it will be, and steel is generally a harder material than stainless steel. Because steel has the property of rusting easily, it has been said that ``the rustier the blade, the better it cuts.'' Ginsan is a special steel material that has been developed to be rust resistant even though it is made of steel.
<What is Nashiji>
Nashiji refers to the rough surface of a pear. In traditional crafts, nashiji is one of the processes for textiles and maki-e, and is also widely used for graining. (Sandblasting has a similar feel and appearance, but the basic difference is that sandblasting has a concave surface, while nashiji has a convex surface.) Although it is simple and matte, it is still a work of craftsmanship. It has a finish that gives it a sense of presence.

・The indigo dye will not ooze out due to the waterproof coating that complies with the Food Sanitation Act.
・Please note that the waterproof coating may peel off if subjected to strong impact.
- Trying to cut hard or frozen items may cause the blade to spill.
・Do not heat the blade.
・Please do not use the dishwasher.
- After washing with a neutral detergent, remove the moisture thoroughly and let it air dry.

There is a reason why I decided to create a knife with a new concept called the Ai knife.
I wanted to make Japanese knives more hygienic, and I wanted to stimulate the manufacturing industry and craftsmen by creating new value.
In order to create value that is unaffected by time and culture, we decided to develop products centered on functionality and people.
When it comes to tools, functionality is more important than design. It involves people, not machines. I thought that something that is spontaneous and unique to humans, and in a sense resembles folk art, would resonate with the hearts of those of us who are tired of mass production and mass consumption. Possibilities created by craftsmen who would otherwise never have met.
We hope that the value of collaboration with artisans can be conveyed to everyone through the Ai knife!
