What is a Gyuto?

The Gyuto (chef's knife) was introduced to Japan from the West during the Meiji period, along with the culture of eating meat.
Its blade is narrower than that of the Santoku knife, a typical household kitchen knife,
and it was originally intended for cutting meat.
However, it has become widely loved as a "slightly larger all-purpose knife" by those who handle large ingredients.
Its slimmer blade width compared to the Santoku also contributes to its popularity, giving it a stylish appearance.


About the blade material:

Cobalt stainless steel achieves three goals: "superior sharpness," "rust-resistant blade," and "just the right decorative quality."

Achieving both sharpness and rust resistance has been a difficult challenge for kitchen knives.
While pursuing sharpness, the harder the blade, the better,
but stainless steel, which provides rust resistance, is a soft steel.
Cobalt stainless steel is the latest material that has solved this problem.

By using the extremely hard "new steel ZA-18" for the core material,
and sandwiching it between soft stainless steel on the sides,
both excellent sharpness and rust resistance have been achieved.

It also boasts excellent wear resistance, resulting in outstanding and long-lasting sharpness.
Its high chromium content makes it more rust-resistant than other knives.

-Wood grain and indigo dyeing may vary slightly from piece to piece.

・The indigo dye will not ooze out due to the waterproof coating that complies with the Food Sanitation Act.

・Please note that the waterproof coating may peel off if subjected to strong impact.

- Trying to cut hard or frozen items may cause the blade to spill.

・Do not heat the blade.

・Please do not use the dishwasher.

- After washing with a neutral detergent, remove the moisture thoroughly and let it air dry.
