<What is a Gyuto?>
Gyuto was introduced from the West during the Meiji period along with the carnivorous culture.
The blade was narrower than the Santoku knife, and was intended for cutting meat.
It is widely used as a large Santoku knife by people who often cut large ingredients.
It looks slimmer and more stylish than the Santoku, and is the second most popular type after the Santoku.

<About steel>
Traditional Japanese knife steel. In order to pursue sharpness, stainless steel is not mixed with the steel material, so you can experience the original sharpness of a Japanese knife. In addition, the black oxide film that appears during the manufacturing process of the blade is intentionally left intact, creating a unique visual appearance (as the production volume of the steel is very small, it will be either blue steel or white steel depending on the lot. (Please note that we cannot ask customers to choose.)

This product is a combination of Sakai cutlery, a tradition in Osaka, and indigo dyeing, which is rooted in the history of Tokushima. "Craftsman collaboration" by craftsmen from different regions and with different techniques aims to increase added value by combining the values ​​of each technique. The Ai knife is a project that aims to revitalize traditional Japanese techniques by bringing benefits to multiple production areas with a single product. "Craftsman collaboration" combines different craftsmanship techniques from different production areas.
This is a collaboration product between Osaka's Sakai cutlery, which boasts a history of 600 years, and Tokushima's indigo dyeing.

The base wood is Hiba wood, which is top class in rot resistance.
We applied indigo dyeing, which has been valued since ancient times for its antibacterial, deodorizing, and insect repellent effects.

After dyeing the wood, we sprayed it with indigo dye to create a gradation.
A product that combines functionality and visuals has been created.

-Wood grain and indigo dyeing may vary slightly from piece to piece.

・The indigo dye will not ooze out due to the waterproof coating that complies with the Food Sanitation Act.

・Please note that the waterproof coating may peel off if subjected to strong impact.

- Trying to cut hard or frozen items may cause the blade to spill.

・Do not heat the blade.

・Please do not use the dishwasher.

- After washing with a neutral detergent, remove the moisture thoroughly and let it air dry.

Thoughts on Ai knives

There is a reason why I decided to create a knife with a new concept called the Ai knife.

I wanted to make Japanese knives more hygienic, and I wanted to stimulate the manufacturing industry and craftsmen by creating new value.

In order to create value that is unaffected by time and culture, we decided to develop products centered on functionality and people.

When it comes to tools, functionality is more important than design. It involves people, not machines. I thought that something that is spontaneous and unique to humans, and in a sense resembles folk art, would resonate with the hearts of those of us who are tired of mass production and mass consumption. Possibilities created by craftsmen who would otherwise never have met.

We hope that the value of collaboration with artisans can be conveyed to everyone through the Ai knife!
