The deba, the knife for breaking down fish, joins the range.

It is what you reach for to fillet a fish or take it into three.

The spine is thick and the blade heavy behind the edge so that it can go through bone without complaint.

The steel is Shirogami No.2, a favorite among chefs for the balance it strikes between a keen edge and easy sharpening.

It is a carbon steel, so it will rust if left wet. Wipe it dry after use and it will hold an edge most stainless cannot.

(If you have not used one before, it will feel substantial in the hand.)

Do not hack at anything with it — chipping is the usual result. Lay a hand along the spine and press through the cut instead.

A 15cm blade handles most fish; this 18cm was made for the larger ones.

About handling methods and precautions

Wood grain and the depth of the indigo differ slightly from piece to piece.

A food-safe waterproof coating keeps the indigo from bleeding out.

The coating can come away if the knife takes a hard knock.

Cutting anything hard or frozen will chip the edge.

Do not hold the blade over a flame.

Please do not put it in the dishwasher.

Wash with a mild detergent, dry it thoroughly, and leave it to air-dry.
