<Product Features>
The "Indigo Bocho" series boasts a unique presence, featuring traditional kuro-uchi (black-forged finish) and a hammered pattern (tsuchime) meticulously crafted by artisans.
Kuro-uchi is a traditional manufacturing method originating in the Edo period, where the surface of the blade is intentionally left unpolished, retaining a black oxide film. Conventional kuro-uchi knives were primarily made from steel (hagane), which tends to form an oxide film. While offering excellent sharpness, their susceptibility to rust was a challenge. In this series, however, we have successfully implemented kuro-uchi using rust-resistant stainless steel. This innovative series combines the authentic sharpness of Japanese knives with the ease of maintenance suitable for home use.
<Why a 3-piece set is convenient>
While a single santoku knife can do many things, daily cooking inevitably involves three scenarios: "small tasks," "all-purpose," and "large ingredients/meat."
This set includes a petty knife, a santoku knife, and a 21cm gyuto knife from the same series, allowing you to choose the optimal knife for each specific task.
