This knife boasts a unique presence with its traditional kuro-uchi finish and hand-hammered tsuchime pattern created by artisans. Kuro-uchi refers to a traditional method originating in the Edo period, where the surface of the blade is intentionally left unpolished, retaining a black oxidized film. Traditionally, kuro-uchi knives were made from steel, which, while offering excellent sharpness, was also prone to rust. We have now succeeded in creating kuro-uchi knives from rust-resistant stainless steel.This technological innovation has resulted in a groundbreaking series that combines the authentic sharpness of a Japanese knife with the ease of maintenance for home use.
The Santoku knife is widely used in general households.
Its name "santoku" (three virtues) comes from its ability to handle meat, fish, and vegetables, and it is also called an all-purpose knife because of its versatility.
While petty and gyuto knives have slim blades, santoku knives are designed to be wider. This allows the blade to remain fully embedded when cutting larger vegetables like cabbage, ensuring a complete cut.
It is the ideal knife to choose first or to replace an existing one.

- After washing with a neutral detergent, remove the moisture thoroughly and let it air dry.
