About the Nakiri

The nakiri has a deep blade and a flat, squared-off tip, shaped for vegetables — julienne, rough chopping, fine mincing.

It is a little heavier than a santoku so that it can get through dense vegetables like squash.

Prep work on vegetables takes more time than any other task in a kitchen, domestic or professional, and the faster and cleaner you get through it, the better the food tastes. The nakiri is there to make that part of cooking enjoyable.

About the steel

Die steel is known for being exceptionally hard, which puts this blade among the three sharpest in the Indigo Bocho range. Strictly speaking it is not stainless, but it resists rust well, and its plain, unfussy look has made it a favorite.

About Indigo Bocho

Indigo dyeing has been part of everyday life in Japan for centuries, valued for the antibacterial and deodorizing qualities long attributed to it. The Indigo Bocho brings that craft to a kitchen knife, so that how a knife performs and how it looks are settled together. Each one joins Sakai bladesmithing, an Osaka tradition, to the indigo dyeing rooted in the history of Tokushima. Putting artisans from different regions and different disciplines on the same object is the whole point: each craft is worth more for standing next to the other. There is a wider aim as well — one product that supports several craft regions at once, and helps keep Japan's traditional skills in working use. We hope you enjoy what the two crafts make together.

About handling methods and precautions

-Wood grain and indigo dyeing may vary slightly from piece to piece.

・The indigo dye will not ooze out due to the waterproof coating that complies with the Food Sanitation Act.

・Please note that the waterproof coating may peel off if subjected to strong impact.

- Trying to cut hard or frozen items may cause the blade to spill.

・Do not heat the blade.

・Please do not use the dishwasher.

- After washing with a neutral detergent, remove the moisture thoroughly and let it air dry.

Why Indigo Bocho

There is a reason why I decided to create a knife with a new concept called the Indigo Bocho.

I wanted to make Japanese knives more hygienic, and I wanted to stimulate the manufacturing industry and craftsmen by creating new value.

In order to create value that is unaffected by time and culture, we decided to develop products centered on functionality and people.

When it comes to tools, functionality is more important than design. It involves people, not machines. I thought that something that is spontaneous and unique to humans, and in a sense resembles folk art, would resonate with the hearts of those of us who are tired of mass production and mass consumption. Possibilities created by craftsmen who would otherwise never have met.

We hope that the value of collaboration with artisans can be conveyed to everyone through the Indigo Bocho!
