A yanagiba for left-handed cooks.

It is used after the fish is broken down, when the slices have to look right. Ground on one side only, it cuts a clean face and leaves a crisp edge on the slice.

A santoku or a gyuto cuts by pushing; a yanagiba cuts by pulling, which is why the blade runs to 20cm and beyond.

It is made in traditional Japanese carbon steel, harder and keener than a double-bevel knife. The trade is rust: keep it dry and wipe it down after use.

"Craftsman collaboration": different crafts, from different regions, brought together in one object.

This one pairs Sakai bladesmithing in Osaka, with six hundred years behind it, with the Tokushima artisans who worked out how to dye wood with indigo.

One product, several craft regions, all of them better off for it — that is the model the Indigo Bocho is built on.

It has already begun to draw attention outside Japan. We hope you get to hold one.

About handling methods and precautions

Wood grain and the depth of the indigo differ slightly from piece to piece.

A food-safe waterproof coating keeps the indigo from bleeding out.

The coating can come away if the knife takes a hard knock.

Cutting anything hard or frozen will chip the edge.

Do not hold the blade over a flame.

Please do not put it in the dishwasher.

Wash with a mild detergent, dry it thoroughly, and leave it to air-dry.

Why Indigo Bocho

There is a reason why I decided to create a knife with a new concept called the Indigo Bocho.

I wanted to make Japanese knives more hygienic, and I wanted to stimulate the manufacturing industry and craftsmen by creating new value.

In order to create value that is unaffected by time and culture, we decided to develop products centered on functionality and people.

When it comes to tools, functionality is more important than design. It involves people, not machines. I thought that something that is spontaneous and unique to humans, and in a sense resembles folk art, would resonate with the hearts of those of us who are tired of mass production and mass consumption. Possibilities created by craftsmen who would otherwise never have met.

We hope that the value of collaboration with artisans can be conveyed to everyone through the Indigo Bocho!
